Layers of black forest ham, melted havarti cheese, and hummus with fresh herbs is melt in your mouth fantastic!

Yield: 1 sandwich, 2 cups of hummus

Ingredients:

For the sandwich:

3 ounces deli black forest ham slices

2 slices of bread

2 slices of havarti cheese

1/3 cup fresh spinach leaves

For the Hummus:

1 can chickpeas; drained and rinsed

1/2 cup fresh parsley

1/2 cup fresh basil leaves

1/2 tsp. cumin

1/2 a lemon; juiced

salt; to taste

olive oil, to taste; add as needed 

Preparation:

For the hummus:  Wash and pat dry the parsley and basil. Strip all the leaves.

In a food processor combine the chickpeas, cumin, basil, parsley, lemon juice, and salt. Drizzle in the olive oil while its mixing and add until you reach a smooth consistency. 

For the sandwich: Spread some hummus over each slice of bread. Layer on top the slices of ham, spinach, and havarti cheese. In a medium sized pan, heat to medium high and lightly coat with olive oil. Grill the sandwich 1-2 minutes on each side until the bread is toasted, and the cheese is melted.
