This lovely salad, is a light healthy option. Full of creamy avocado, broccoli, and fresh kale. I love to make this salad after a long day at work, its ready in minutes, and full of healthy fats like avocado and olive oil.

Yield: 2 servings

Ingredients:

1 bunch kale leaves

1/2 cup broccoli; diced

2 avocados; pitted

1 lemon, juiced

1 tsp. cayenne pepper

1 tsp. paprika

3 tbsp. olive oil

1 roma tomato; diced

1 tbsp.  fresh basil leaves; minced.

Preparation:   Wash all produce and pat dry.  Strip the leaves form the kale stems and place in a medium sized bowl. Discard the stems. Pitt the avocados and remove the avocado flesh from the peel and toss in with the kale. Using your hands mash up the avocado into the kale leaves until well blended. Dice the tomatoes and broccoli, and mince the basil. Add in the sea salt, lemon juice, cayenne pepper, paprika, and olive oil. Toss all until well combined.
