This delicious crab salad, is ready in minutes and great to make when you don’t have a lot of time. Serve over toasted bread, lettuce wraps, salad, or mix with pasta.
Yield: 2 servings
1 can crab, drained
2 tbsp. mayonnaise
1 cup plain greek yogurt
1 scallion, sliced thin
1 cucumber, peeled and diced
1/2 tbsp. old bay seasoning
1/4 tbsp. capers
1/4 tbsp. dill
1/2 tbsp. fresh parsley, minced
pepper, to taste
Wash all produce. Slice the scallions, peel the cucumber and dice. Remove the leaves from the stems on the parsley and mince. Drain the crab meat well and set aside.
In a medium bowl, mix together the crab, mayonnaise, greek yogurt, scallions, cucumber, old bay seasoning, capers, dill, parsley, and pepper.
Chill in the fridge for 30 minutes, and serve.
