There are so many wonderful flavors and textures in this salad. Chickpeas, snap peas, red pepper, coconut flakes, and cashews tossed in a sweet chili orange sauce compliments all the ingredients so well. I love making this for summer parties and gatherings with friends.
Yield: 10 servings
2 cans Chickpeas
1/2 snow peas
1 red bell pepper
1/4 cup unsweetened coconut
1/3 cup raw cashews
1/4 cup dried fruit (pineapple, apricot, mango, any kind you like)
1/4 cup orange marmalade
1/4 cup sweet chili sauce
1/4 cup oil, canola, vegetable, or olive
Wash all produce.
Dice the red pepper, and snow peas in a medium dice.
Drain and rinse garbanzo beans.
In a large bowl; combine garbanzo beans, snow peas, red pepper, coconut, and cashews and toss.
In a small bowl; add the orange marmalade, sweet chili, and oil. Stir until well combined and mix into the salad. Keep refrigerated until ready to serve.
